apple pudding
 

My favourite thing about this time of year is…

All the delicious apples. Our trees are hanging with them this year and I’m making the most of it. This is my all time favourite pudding. It can be made with pears too.


140g self-raising flour
100g golden caster sugar
1 tbsp baking powder

a pinch of salt

85g butter, melted
200ml milk
egg

2 tsp vanilla extract
Bramley apples, peeled cored and sliced in rings (or roughly 6 pears)

For the topping
200g dark brown sugar
300ml boiling water

Heat oven to 180C/fan 160C/gas 4.
Grease a 2-litre ovenproof dish lightly with butter.
Put the dry ingredients into a bowl.
Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter.
Arrange the apples in the dish, spoon the batter on top.

For the topping, pour 300ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture. this looks very odd. Fear not. It will come together!
Bake for about 40 mins until the pudding has risen and is golden. eat with a big spoonful of shepherds ice cream.
